Thanks for asking about what Canon camera body to use with a Canon RF 100-500MM lens. Fortunately, you can choose any one of the Canon "R" mirrorless cameras.
At the time of this post, you can choose the Canon R, the Canon RP, Canon R5, or Canon R6. Stay away from the Canon "M" mirrorless cameras.
You're probably interested in shooting sports or wildlife with your Canon RF 100-500 lens. You need to be aware of which of the Canon R mirrorless camera bodies is compatible AND has a fast enough shutter speed. All four of the Canon R camera bodies I listed have fast enough shutter speeds.
The RP is the most affordable full frame Canon camera body and has a 1/4000 second fastest shutter speed. The Canon R, Canon R5, and Canon R6 all have fastest shutter speeds of 1/8000 second.
